
I made this cake last weekend over Memorial Day. All the kids were home and it was a picture perfect weekend. We swam, and ate and drank, and had the most beautiful weather. The son in laws helped move yards of soil, and helped around the farm. It was really great!
When I had a three hour break on Sunday, when everyone was off doing their own thing, I decided to tackle this recipe that I got off Facebook, on the Southern Living site. I will provide the link below. It is not something that you’re just going to throw together and into the oven, so make sure you have a chunk of time set aside to make this. It involves making the cake batter, making the pineapple reduction on the stove for the filling, making the frosting from scratch, and then cutting the two cakes into four and filling and stacking and then frosting. It is definitely worth the effort, but also time consuming. My son in law Tyler, who is not a cake fan, said it was better than any pie he’d ever tasted (he loves pie)! Quite the compliment. And my husband has asked me to make it again for his birthday, next month, and Father’s Day, next month, and our Anniversary, next month. That’s how good it was!
